Opa's Broccoli Salad

The broccoli salad that disappears first at every potluck. Crisp raw broccoli, sharp cheddar, and red onion get tangled in a tangy-sweet dressing and finished with crumbled Opa's Peppered Bacon, which brings the smoke and the crunch. It comes together in minutes and only gets better while it waits.

Ingredients

  • 8 slices Opa's Peppered Bacon
  • 2 heads fresh broccoli, chopped
  • 1-1/2 cups sharp cheddar cheese, shredded
  • 1/2 large red onion, chopped
  • 1/4 cup red wine vinegar
  • 1/8 cup white sugar
  • 2 teaspoons ground black pepper
  • 1 teaspoon salt
  • 2/3 cup mayonnaise
  • 1 teaspoon fresh lemon juice

Directions

  1. Crisp the bacon. Cook the Opa's Peppered Bacon in a large, deep skillet over medium-high heat until evenly browned. Drain and crumble.
  2. Combine. In a large bowl, combine the broccoli, cheese, bacon, and onion.
  3. Dress and chill. In a small bowl, whisk together the red wine vinegar, sugar, pepper, salt, mayonnaise, and lemon juice. Toss with the salad, cover, and refrigerate until ready to serve.
