A few blocks off Main Street, on Highway 87, the smokehouse has a front door. The Deli & Market is a gourmet food and gift shop built around what we make: a deli counter that turns out sandwiches, charcuterie boards, meat and cheese trays and prepared salads to order, a tasting station that’s always going, the full smoked meat lineup in the case, a butcher counter with fresh cuts, and a specialty shelf that’s hard to leave without a jar.
At the counter
Sandwiches made to order, hot or cold. Charcuterie boards and meat and cheese trays for a table or a picnic. Prepared salads by the container or the pound, and box lunches when you need lunch for a few. The sausage wrap is the counter’s own thing: any link on the lineup, any flavor, in a flour tortilla, all day.

The tasting station
Four sausages are on the station at all times, and they rotate, so a second visit tastes different from the first. If you’ve never had the Hatch Green Chile or the Chicken Poblano Monterey Jack, this is where to start.
The market and gift shop
Your grocery store carries our smoked sausage and a few more of our smoked meats. The market carries the full lineup: whole smoked turkeys, hams, tenderloins, cured meats, Peppered Bacon, Knackwurst, and the bulk cases. Around them, the gift shop: jarred goods under the Opa’s label, German specialties we carry because we’d eat them ourselves, Hill Country goods, and gift baskets built here, to order, that go home with you.
The butcher counter
Open to the public, with fresh cuts for the grill and the week: boneless pork, BBQ cuts, pork chops, fresh chickens, and ribeye steaks. Walk in for what you need; for a large or bulk order, call 36 hours ahead at 830-997-3358 and it’ll be ready when you arrive.
For the road
Everything travels. We sell insulated bags and gel packs at the counter, and a full bag rides comfortably to San Antonio, Austin, or Dallas. If you’d rather send a gift home than carry it, the online store ships every smoked meat cold, anywhere in the U.S., and it’s easiest to place that order yourself from your phone.
