About Opa's
Opa's Smoked Meats is a working Texas-German smokehouse in the heart of downtown Fredericksburg, Texas, run by the same family on the same property since 1947. A few blocks off Main Street, on Highway 87, a live tasting griddle runs all day, and many of the roughly 1.5 million visitors who come to Fredericksburg each year taste Opa's smoked sausage for the first time here, then look for it at home. Today Opa's is carried in leading grocery stores across Texas, the South and Southwest, ships nationwide from opassmokedmeats.com, and still makes everything at the address where it started.
Fredericksburg was founded in 1846 by German immigrants who brought a deep food culture with them: precision sausage-making, curing, and the butcher's craft. That tradition took root in the Texas Hill Country and helped shape what the rest of the country now thinks of as Texas barbecue. In 1947, it gave rise to Opa's. Three generations later, the founding family still operates the business on the property where it began. The original walk-in cooler and freezer doors, with their original heat strips, remain in daily use. No ownership changes, no relocation.
