Fredericksburg History: The Legacy of the Smokehouse
Nestled in the heart of the Texas Hill Country, Fredericksburg has a rich history that dates back to May 8, 1846, when 120 pioneers from New Braunfels, led by John Muesebach, founded the town. At that time, the area was Comanche Indian territory. Remarkably, just a year later, on May 9, 1847, John Muesebach and Comanche Chief Santanna forged a peace treaty that allowed the two communities to live harmoniously side by side. This treaty stands out in U.S. history as the only one that was never broken—a testament to the strength and resilience of these early settlers.
The Tradition of Smoking Meat in Fredericksburg
Among the many traditions brought by these German settlers to Gillespie County was the art of smoking meat for preservation—a practice that remains a cornerstone of the local culture nearly two centuries later. This enduring tradition is alive and well at Opa’s Smoked Meats, established in 1947 and now in its third generation of family ownership. For over 75 years, Opa’s has been perfecting the craft of smoking hams, turkeys, sausages, and more, using time-honored techniques passed down through the generations.
