Made with select cuts of veal and pork, our bratwurst honors Hill Country German heritage with traditional seasonings and a smooth, hearty bite. Smoked in small batches and fully cooked, it carries the balance of a classic bratwurst with the smoke profile that’s defined Opa’s since 1947.
Throw it on the grill with a cold pilsner and a soft pretzel, simmer it into a Sunday stew with caraway and onions, or serve it on a Hill Country plate with sauerkraut, grainy mustard, and warm rye. Equally at home at an Oktoberfest table or a backyard cookout.

All Opa’s smoked meats require refrigeration, without exception. Generally, smoked sausage has a ninety-day refrigerated shelf life and can be frozen for up to one year. Keep tenderloins and jerky in a well-ventilated, dry area of the refrigerator. Do not store tenderloins or jerky in plastic wrap, plastic bags or any sealed container — these items keep best loosely wrapped in a clean kitchen towel or paper towel.
Preparing Opa’s Smoked Meats:
Our smoked meats are fully cooked and ready to serve. Hams, turkeys and tenderloins are great cold or gently heated in the oven… don’t overheat or these delicious, juicy meats may dry out. Grill our sausage, heat in the oven or on the stovetop in a skillet. It’s especially good simmered in beer. We do not recommend heating sausage in a microwave — it toughens the sausage casing.
We ship our smoked meats the way we'd want them to arrive: cold, fresh, and packed to handle the trip. Everything that leaves Fredericksburg goes out in a reusable insulated box with reusable ice packs, by UPS, anywhere in the United States — the continental U.S., plus Alaska and Hawaii.
When we ship
Because we're sending perishable food, timing matters. Texas orders ship Monday through Wednesday by UPS Ground; out-of-state orders ship Monday and Tuesday by UPS expedited service. We ship early in the week on purpose, so your order isn't sitting in a facility over a weekend. Need it sooner? Overnight shipping is available for an additional charge — just call us at 830-997-3358 before your order ships and we'll set it up.
Why we don't offer free shipping
Free shipping always has to be paid for somewhere — usually by raising product prices across the board. We'd rather be straightforward about it. Getting perishable smoked meat to your door in good condition takes insulated packaging, ice packs, and quick transit, and that carries a genuine cost. So instead of folding it into the price of everything, we calculate shipping at checkout from the size and weight of your order and where it's headed. You see exactly what it costs, and you only pay for what your shipment actually needs.
When your order arrives
As soon as your order ships, you'll get a confirmation email with tracking — keep an eye on it so you can bring your box inside promptly. When it arrives, move everything into the refrigerator or freezer as soon as you can. One thing worth knowing: if the product is cool to the touch, it's safe, and some melting of the ice packs along the way is completely normal — the insulation and ice are sized to keep your order cold for the trip, not to arrive frozen solid. And both the box liner and the ice packs are made to be reused, so keep them for your own coolers, picnics, and Hill Country road trips.
If something isn't right
If your order arrives damaged or warmer than it should be, reach out within 24 hours of delivery at info@opasfbg.com or 830-997-3358. Include a couple of photos and a brief description of what happened, and we'll work with you to make it right.

Best brats I’ve ever found. Reminded me of the great wursts we’d buy at the “Schnell Imbiss” while stationed in Hanau!.
Not since I was a kid 👧 n Cincinnati have I had brats as good as these! Cincinnati is a German town… and the Cincinnati Reds baseball team serve up wonderful brats. But these Opa brats are contenders! Fabulous! 1000 percent better than Johnsonville brand. These Opa brats are “da bomb!” I simmered them in beer and served them with sautéed onions and sourkrout. Delish!
