Opa's Smoked Meats
Opa's Sausage Trifecta
Opa's Sausage Trifecta
Three bestsellers. Nine pounds of Opa's.
The Opa's Sausage Trifecta is a generous selection of our three most popular smoked sausages — three pounds each of Country Blend, Beef, and Jalapeño Cheddar, all crafted in small batches and fully cooked, ready to warm on the grill, in a skillet, or slice cold. Built for households that want their favorite Opa's flavors always on hand.
Throw a mix on the grill alongside crusty bread for a backyard cookout, slice them onto a board with sharp cheddar, pickled okra, and grainy mustard, or simmer them into red beans and rice for a Sunday family dinner. Stock the freezer for game days, holiday weekends, and last-minute hosting. Pair the bold Beef with sharp mustard and rye, the balanced Country Blend with sauerkraut and grainy mustard, and the Jalapeño Cheddar with creamy pasta or eggs for breakfast — three distinct flavor stories from one bundle.
Includes:
- 3 lb Country Blend Smoked Sausage
- 3 lb Beef Smoked Sausage
- 3 lb Jalapeño Cheddar Smoked Sausage
A craft from Opa's, Fredericksburg's smokehouse since 1947.

Sheet Pan Sausage & Sweet Potatoes with Opa's Jalapeño Cheddar Jalapeño Cheddar roasted with sweet potatoes, peppers, and onion under a honey-garlic glaze — forty minutes, one pan.
Opa's Beef Smoked Sausage and Vegetable Skillet All-beef sausage browned until crisp, then simmered with peppers, onion, and zucchini in a smoky pan sauce — one skillet, half an hour.
BBQ Smoked Sausage Pizza with Opa's Jalapeño Cheddar The bestseller sliced on an angle so the edges crisp, with barbecue sauce where the marinara used to be — twenty minutes.
Opa's Smoked Sausage Slider Bites Thick sausage medallions browned golden and stacked on toasted buns with melted cheese and quick-pickled red onion.
Opa's Gumbo A dark roux, the trinity, a pound of Opa's sausage, smoked chicken, shrimp, and okra — gumbo for a crowd.
Medium heat, never high. Turn it often, and don't prick the casing — the snap is the point. Let the links sit out 10–15 minutes first; they heat more evenly.
Grill: medium heat, indirect, 8–10 minutes, turning often.
Skillet: ½ inch of water, bring to a simmer, about 12 minutes turning often. Pour the water off and give the links 1–2 minutes dry — that brings the color and the snap back.
Oven: 375°F on a baking sheet, about 10 minutes, flip halfway.
Air fryer: 300°F, no preheat, single layer, 7 minutes, no turning.
Coins: slice ¼ inch — one link gives 14 to 16. Sheet pan at 375°F about 6 minutes, turning halfway, or air fryer at 300°F about 4 minutes.
Microwave: not recommended — it toughens the casing.
The Jalapeño Cheddar runs a little lower — high heat pushes the cheese out.
Keeping it: refrigerate — without exception. Unopened, good through the best-by date on each package. Opened, airtight in the refrigerator for 5–7 days. Freeze by the best-by date — good for up to a year.
We ship our smoked meats the way we'd want them to arrive: cold, fresh, and packed to handle the trip. Everything that leaves Fredericksburg goes out in a reusable insulated box with reusable ice packs, by UPS, anywhere in the United States — the continental U.S., plus Alaska and Hawaii.
When we ship
Because we're sending perishable food, timing matters. Texas orders ship Monday through Wednesday by UPS Ground; out-of-state orders ship Monday and Tuesday by UPS expedited service. We ship early in the week on purpose, so your order isn't sitting in a facility over a weekend. Need it sooner? Overnight shipping is available for an additional charge — just call us at 830-997-3358 before your order ships and we'll set it up.
Why we don't offer free shipping
Free shipping always has to be paid for somewhere — usually by raising product prices across the board. We'd rather be straightforward about it. Getting perishable smoked meat to your door in good condition takes insulated packaging, ice packs, and quick transit, and that carries a genuine cost. So instead of folding it into the price of everything, we calculate shipping at checkout from the size and weight of your order and where it's headed. You see exactly what it costs, and you only pay for what your shipment actually needs.
When your order arrives
As soon as your order ships, you'll get a confirmation email with tracking — keep an eye on it so you can bring your box inside promptly. When it arrives, move everything into the refrigerator or freezer as soon as you can. One thing worth knowing: if the product is cool to the touch, it's safe, and some melting of the ice packs along the way is completely normal — the insulation and ice are sized to keep your order cold for the trip, not to arrive frozen solid. And both the box liner and the ice packs are made to be reused, so keep them for your own coolers, picnics, and Hill Country road trips.
If something isn't right
If your order arrives damaged or warmer than it should be, reach out within 24 hours of delivery at info@opasfbg.com or 830-997-3358. Include a couple of photos and a brief description of what happened, and we'll work with you to make it right.

love it. Thanks
We love sharing Opa’s sausage so this year we gave it to our daughter and son in CA. Nothing compares in CA, their words so we were happy to oblige and provide. Opa’s the best and we always remain stocked up no matter the season!
While I was in Denton, Texas, my brother introduced me to their jalapeno cheddar sausage. These were some of the best tasting I've ever had. Their shipping was fast and efficient. Great product!
I always make my friends happy when I send Opa’s products as gifts, especially sausages. Enjoyed by the whole family. Easy to order and fast delivery.
The customer service is fantastic. They are pleasant and courteous, and know their operation.
Their products are the best. Each Christmas when we receive our orders, we are taken back many years to our dad's and granddad's sausage.
Thank for excellent product and service that Makes our Christmases a "a trip back to the ranch"
