Opa's Hatch Green Chile Smoked Sausage brings authentic New Mexico Hatch chiles together with premium beef and pork in a richly seasoned blend. Mild heat, bright flavor, and a balanced finish — crafted in small batches, fully cooked, and ready to grill, sauté, or slice. Available year-round at Opa's, not just at fall harvest.
Throw it on the grill alongside cold beer and Mexican street corn, slice it into a breakfast skillet with eggs, potatoes, and queso fresco, or simmer it into a hearty green chile stew with potatoes and pork shoulder. Pair it with warm flour tortillas and avocado for breakfast tacos, or serve it on a charcuterie board with sharp cheddar, pickled okra, and crackers for a Hill Country spread. All Opa’s smoked meats require refrigeration, without exception. Generally, smoked sausage has a ninety-day refrigerated shelf life and can be frozen for up to one year. Keep tenderloins and jerky in a well-ventilated, dry area of the refrigerator. Do not store tenderloins or jerky in plastic wrap, plastic bags or any sealed container — these items keep best loosely wrapped in a clean kitchen towel or paper towel.
Preparing Opa’s Smoked Meats:
Our smoked meats are fully cooked and ready to serve. Hams, turkeys and tenderloins are great cold or gently heated in the oven… don’t overheat or these delicious, juicy meats may dry out. Grill our sausage, heat in the oven or on the stovetop in a skillet. It’s especially good simmered in beer. We do not recommend heating sausage in a microwave — it toughens the sausage casing.

All products are shipped frozen to ensure the quality of your order. All packages are shipped in a sealed styro-foam container packed with frozen gel packs.
While we make every effort to minimize shipping charges for our customers, any order shipped to an address not in Texas will require expedited shipping and handling rates to accommodate shipping requirements for perishable items. These rates are already reflected in the out of state rate chart.

Excellent flavor and mild taste. Fresh
I LOVE these sausages! They arrived within just a few days, packed in ice bags and a nice styrofoam cooler! I cut them down the center and fry the halves in butter, face down. Mmmmm! BUT, shipping was $40!! That more than doubled the price of the 3-pack of sausages on-line! My local co-op farmers' market sells them occasionally, so I'll keep buying them there when they're available. .
