Is Smoked Sausage Already Cooked?
Yes. Every smoked sausage Opa’s makes is fully cooked before it leaves the smokehouse. You are heating it, not cooking it.
That single fact changes how you should handle it, and most people never get told. So here is the whole answer, including the two exceptions that make the rule worth stating carefully.
What “fully cooked” actually means
Smoked sausage goes through the smokehouse and comes out finished. By the time the package is sealed, the work is done. When you bring it home, nothing about it is raw, and nothing about it requires cooking in the way raw sausage does.
Your job is to make it hot and give it some color. That is genuinely all.
This is why the language matters, and why we are careful about it: we heat smoked sausage, we brown it, we warm it through. We do not cook it. That is not a stylistic preference — it is the difference between a link handled correctly and a link somebody overcooked because they thought they had to.
Why people get this wrong
Because the other sausage in the case is raw.
Fresh bratwurst from a butcher counter, breakfast sausage in a tube, Italian sausage in a tray — all raw, all requiring real cooking to a real internal temperature. Most home cooks learned sausage from those products, and they carry the habits over: long times, high heat, checking the center, worrying about doneness.
Applied to a fully cooked smoked link, those habits produce exactly one outcome (the five worst have their own post: the five mistakes that ruin smoked sausage). The casing splits, the juices leave, and the link goes dry. Not because anything was wrong with the sausage, but because it was cooked when it only needed heating.
The two exceptions
We would rather tell you this plainly than have you find out sideways.
Opa’s Peppered Bacon is raw. It is the only raw item in our packaged smoked line, and it needs to be cooked like any bacon.
Opa’s Fresh Sausage is raw. It lives in the deli case in Fredericksburg, sold frozen — pork and beef, salt and pepper, nothing else, made in house. It is exactly what its name says, and it needs to be cooked through before serving.
Everything else — every smoked sausage, the hams, the smoked turkey and chicken, the tenderloins, the Canadian bacon, the summer sausage, the cured meats — is fully cooked and ready to heat or eat cold.
So what do you actually do with it?
Heat it gently and give it color. Medium heat on the grill — links beside the flame, not over it — for eight to ten minutes, turning often. Half an inch of water in a skillet at a simmer for about twelve minutes, then pour off the water and give it another minute or two dry to bring the color back. In a 375°F oven, about ten minutes with a flip halfway.
Never high heat, in any method. High heat splits the casing before the middle is warm, which is the one failure mode that matters. Our heating guide outlines all of the different methods based on your preferences.
And you can skip heating entirely if you want to. Summer sausage, cured meats, and sliced tenderloin are meant to be eaten cold straight from the refrigerator. A fully cooked smoked link is safe cold too, though it is considerably better warm.
The short version
Smoked sausage is cooked. Bacon and Fresh Sausage are not. Everything else is heat-and-eat, and treating it that way is the difference between a good link and a dry one.
Small Batch. Craft Made. Texas-German tradition — since 1947.

Frequently Asked Questions
Is smoked sausage already cooked?
Yes. Every Opa’s smoked sausage is fully cooked in the smokehouse before packaging. You are heating and browning it, not cooking it.
Can you eat smoked sausage cold?
You can — it is fully cooked. Summer sausage, cured meats, and sliced tenderloin are made to be eaten cold. A smoked link is safe cold but noticeably better warm.
What temperature should smoked sausage reach?
Since it is already cooked, hot all the way through is the finish line rather than a number. If you prefer a thermometer, 140°F is the standard reference for a heated-through link as it is already cooked, and going past it only costs you moisture.
Which Opa’s products are raw?
Two. Our Peppered Bacon, which is the only raw item in the packaged smoked line, and our Fresh Sausage from the deli case, sold frozen. Both need to be cooked. Everything else is fully cooked.
What is Opa’s Fresh Sausage?
Pork and beef, salt and pepper, made in house and sold frozen in the Fredericksburg deli case. Unlike our smoked line, it is raw and needs to be cooked through.
Is smoked sausage safe to eat without heating?
Yes, it is fully cooked. Heating is about flavor and texture rather than safety — a warmed link with a tight, browned casing simply eats better.
