Made with juicy chicken thighs, mild poblano peppers, and creamy Monterey Jack cheese, this smoked sausage is a modern take on Texas-German tradition. Smoked in small batches and built around real ingredients, it's a lighter option that still delivers the signature Opa's experience — bright, balanced, and fully cooked.
Pair it with breakfast tacos, toss it into a weeknight pasta with cream and spinach, or slice it onto a charcuterie board with sharp cheese and pickled onions. Equally at home on the grill or in a cast-iron skillet, this is the sausage for anyone looking for something a little lighter without giving up bold flavor.
Made by Opa's in Fredericksburg, Texas. Family-owned since 1947.
Medium heat, never high. Turn it often, and don't prick the casing — the snap is the point. Let the links sit out 10–15 minutes first; they heat more evenly.
Grill: medium heat, indirect, 8–10 minutes, turning often.
Skillet: ½ inch of water, bring to a simmer, about 12 minutes turning often. Pour the water off and give the links 1–2 minutes dry — that brings the color and the snap back.
Oven: 375°F on a baking sheet, about 10 minutes, flip halfway.
Air fryer: 300°F, no preheat, single layer, 7 minutes, no turning.
Coins: slice ¼ inch — one link gives 14 to 16. Sheet pan at 375°F about 6 minutes, turning halfway, or air fryer at 300°F about 4 minutes.
Microwave: not recommended — it toughens the casing.
Cheese varieties (Jalapeño Cheddar and Chicken Poblano Monterey Jack) run a little lower — high heat pushes the cheese out.

What is Opa's Chicken Poblano Monterey Jack Smoked Sausage?
Opa's Chicken Poblano Monterey Jack is the only chicken sausage in the Opa's lineup — a lighter, mild option with poblano pepper and Monterey Jack cheese. Fully cooked and gluten free. Contains dairy.
Is it fully cooked?
Yes. It's already fully cooked — you're just heating it through. Medium heat, turn it often, don't rush it.
How hot is it?
Mild: gentle poblano warmth — flavor first, heat barely there.
Is it pork-free?
The filling is chicken, but every Opa's sausage is made in a natural pork casing, so it isn't pork-free. It contains Monterey Jack (dairy); no gluten ingredients, no soy.
Which stores carry it?
Grocery stores across Texas, the South and Southwest. See every store on our Where to Buy page, or ask at the counter in Fredericksburg.
How does it ship?
In an insulated box with gel packs — Texas orders Monday–Wednesday, out of state Monday–Tuesday, so nothing sits over a weekend. Enter your ZIP in the cart to see your exact shipping rate before checkout.
Where can I buy it?
Right here — it ships cold anywhere in the U.S. — and at our Deli & Market in Fredericksburg. Grocery stores across Texas, the South and Southwest carry a selection of what we make; Where to Buy shows what each store near you has.
