Tailgate Smoking Made Easy

You know the guy. He arrived at seven in the morning to babysit a smoker, and he’ll spend the entire pregame tending coals, checking temps, and telling everyone it’ll be ready “in about two more hours.” Respect to him — genuinely. But four spots down, there’s a crew that’s already eating, already on their second round, already throwing the football. Their secret isn’t a better smoker. It’s that their smoking got done in Fredericksburg, Texas, before they ever left the house.

That’s the whole trick of tailgating with Opa’s, and this is the playbook.

We Already Did the Hard Part

Every Opa’s link arrives fully cooked. The slow-developed smoke flavor is already in the sausage, the work already finished. Which means the tailgate version of “smoking meat” takes minutes, not hours, and asks nothing of you but heat and attention. No raw meat riding in your cooler. No thermometer anxiety in a parking lot. No six-hour commitment to a folding chair. The flavor everybody came for was built by a family that’s owned the business since 1947; your only job is the victory lap.

How to Work the Lot

Here’s the whole operation, start to finish. Any portable grill works — charcoal or propane, nothing fancy. Run it at medium, keep the links off direct flame; the one way to lose a fully cooked link is blasting it until the casing splits and the juices hit the coals. Lay the links on whole, turn them as they go, and pull them when the casing is deep golden and tight enough to snap. You’re warming through and building color, and that happens fast. Then the move that separates the veterans: a foil pan on the grill’s coolest corner, where finished links stay warm while the next round warms through and the stragglers wander back. Slice some into coins for the toothpick crowd, keep the rest whole for the bun crowd, and you’re the best-fed spot in the lot before the guy with the smoker has hit the stall.

A Trio That Feeds Everybody

The counter’s tailgate call is a three-flavor spread: Beef for the no-heat plates and the kids, Chicken Poblano Monterey Jack Smoked Sausage for the mild-and-lighter lane, and Jalapeño Cheddar (the #1 seller) carrying the medium heat and the cheese pull that makes people ask whose sausage this is. Three platters, every palate covered, nobody negotiating — and all three ride in the same refrigerated case at the grocery store, so the whole spread is one stop on the way home. (Running with a heat-lover crew? Habanero makes it a foursome — just label the platter.)

Doing the Math

The house number: figure a link and a half per person when there are sides — chips, dips, the usual lot spread. Ten people, fifteen links — and since every package holds four, that’s four packages in the cart. Twenty people, eight. Big eaters or thin sides, round up; and always heat a few extra, because the fourth-quarter appetite is real and the neighboring tailgate has a way of drifting over once the wind carries the news.

Cover the No-Cook Flank

The rookie mistake is having nothing to eat until the grill’s going. The fix costs zero cooking: summer sausage, sliced, with crackers or chips — set it out the moment the tailgate opens and it holds the line until kickoff, no utensils, no plates, no effort. Slice the chub at home, keep it cold, pour it onto a board in the lot. Add the cured meats if the crowd runs bigger; the whole flank stays in the cooler until needed and never once asks for a flame.

What to Pack

The short list that makes it seamless: the links and the summer sausage riding cold (the cooler craft is its own guide), buns, a good mustard, a foil pan, tongs, a cutting board and knife for the coins, paper towels in unreasonable quantities. Do the grocery run the day before, not game morning. The trio’s in the refrigerated case at leading grocery stores across Texas, the South and Southwest, and every package is vacuum sealed and keeps to its sell-by date — so buying early costs you nothing and saves you the Saturday scramble. If your store doesn’t stock all three, the whole spread ships ahead of game week.

Four Spots Down

Come Saturday, be the crew four spots down — eating by nine-thirty, generous with the neighbors, mysterious about how the sausage got that good that fast. You can tell them the truth if you want: the smoking was done in Fredericksburg before the season even started. Or just hand them a link and let the smokehouse speak for itself.

Small Batch. Craft Made. Texas-German tradition — since 1947.

Build the tailgate at your grocery store. The trio’s in the refrigerated case across Texas, the South and Southwest (store locator), and some stores stock summer sausage too, or ship the whole spread ahead of game week: the smoked sausage collection, summer sausage, and the Sausage Sampler at opassmokedmeats.com.

Frequently Asked Questions

How long does smoked sausage take on a tailgate grill?

Eight to ten minutes — Opa’s links are fully cooked, so you’re warming through and building golden color over medium heat, away from direct flame, turning as they go. Pull them when the casing is deep golden and snapping tight. Minutes, not hours.

How many links per person should I bring?

A link and a half per person when sides are in play. Ten people, fifteen links, and a few extra for the fourth quarter and the neighbors who smell it.

Which flavors work best for a mixed crowd?

The tailgate trio: Beef (no heat), Chicken Poblano Monterey Jack (mild), and Jalapeño Cheddar (medium, the #1 seller). Add Habanero for the heat lovers and label the platter.

What’s the best no-cook tailgate food?

Summer sausage with crackers or chips — slice it at home, keep it cold, set it out at arrival. It holds the crowd until the grill’s ready and never needs a flame.

Do I need to worry about undercooking sausage at a tailgate?

No — every Opa’s link is fully cooked in the smokehouse. There’s no raw meat in your cooler and no thermometer required; the job is warmth and color, nothing more.

Where can I buy Opa’s for a tailgate?

The refrigerated case at leading grocery stores across Texas, the South and Southwest carries the tailgate flavors — use the store locator to find the closest one, and buy a few days ahead rather than game morning, since every package keeps to its sell-by date. Everything also ships nationwide if you’re outside the grocery footprint or want summer sausage and samplers in the same box.

How do I keep cooked links warm in the lot?

A foil pan on the grill’s coolest corner. Finished links hold there while the next round warms through — warm for the stragglers without drying out.
