The Opa's Cooler Guide: What to Pack & How to Pack It

Some of the best meals in the Hill Country don't happen at a table. They happen at a scenic overlook, on a tailgate, on a blanket spread out at a winery, at the end of a long drive with the windows down. The setting does half the work. The food just has to be good — and good food travels better than people expect.

That's what a well-built cooler is for. Smoked sausage, summer sausage, cured meats, a sharp cheese, crackers, mustard, something pickled. Nothing fussy. Just real food that holds up for a full day and tastes as good on hour seven as it did on hour one — the kind of spread that turns a roadside stop into the meal you remember from the trip.

This is the guide for building one: the Opa's products that travel best, how to pack them, and what to grab depending on where you're going.

The Three Hero Products

Most things in your refrigerator don't travel well. These three do.

Summer sausage. The single best cooler product Opa's makes. It's a cured, semi-dried product designed to be sliced cold and eaten straight from the package — no cooking, no prep, no plates required. It holds up to a full day in a cooler without losing a step. Opa's Summer Sausage is the classic — the original; the Jalapeño Cheddar Summer Sausage follows the same flavor logic as the smoked link, with balanced heat and a creamy finish. Slice the chub yourself with a pocket knife or grab the pre-sliced format for zero effort.

Cured Peppered Smoked Beef and Turkey. Different from the smoked sausages and the summer sausage — these are peppered, cured beef and turkey, more tender and higher in moisture than jerky. Tender rather than tough, with a deep cure flavor and a pepper finish that pairs naturally with sharp cheese and mustard. They keep beautifully in a cooler and taste even better slightly below room temperature than they do at full chill.

Smoked sausage links. Fully cooked. Eat them cold straight from the package, slice them on the bias and pair with cheese and crackers, or warm them on a portable grill or camp stove if you have one. The Jalapeño Cheddar and Country Blend are the most versatile. The Habanero is the move if you want something bold.

What Else Goes In

Build the rest of the cooler around the meats with restraint. The mistake people make is overpacking — twelve things in the cooler isn't better than six chosen well.

A sharp aged cheese. Cheddar, manchego, or aged gouda. Wrap it well so it doesn't get wet from the ice melt.

A creamy or soft cheese. Brie, goat cheese, or havarti. Optional but adds variety if you have room.

Crackers. A box of plain water crackers or a few slices of good rye bread. Pack the crackers above the ice so they stay crisp.

Mustard. Stone-ground or whole-grain in a small jar. The condiment that makes everything else on the cooler menu work better.

Something pickled. Cornichons, pickled okra, or pickled jalapeños. They take up almost no space and add the brightness that everything else needs.

Something fresh. Grapes, apple slices, cherry tomatoes — whatever's in season. The fresh element keeps the spread from feeling heavy.

Something cold to drink. Pack it on the bottom where it's coldest. Beer, wine, sparkling water, whatever the day calls for.

How to Pack It

A few small things separate a cooler that works from one that turns into a soggy mess by lunchtime.

Pre-chill the cooler. A few ice packs or a bag of ice in the empty cooler for an hour before you load it makes a real difference in how cold it stays through the day.

Layer it. Drinks on the bottom (they're the heaviest and tolerate cold best). Meats and cheeses in the middle, wrapped or in containers. Crackers, fresh items, and anything you don't want crushed on top.

Two ice sources. Block ice melts slower and keeps things cold longer. Cubed ice packs items in tighter and chills faster. Use both if you have room.

Wrap the cheeses. Cheese gets weird in a cooler if it's exposed to ice melt. Wrap it in parchment or wax paper and put it in a small container.

Pack a knife and a cutting board. A small wooden cutting board and a sharp knife elevate a cooler lunch from a snack to a meal. Worth the space.

Cooler by Occasion

The Wine Trail

You're going to be tasting all day, and you want something that pairs well with what's in the glass. Pack summer sausage (it's hand-held and doesn't need a plate), cured meats, an aged cheese, crackers, mustard, and grapes. The cured meats and aged cheese pair naturally with a Hill Country Tempranillo. Grab a small wedge of Brie if there's room — it pairs beautifully with a Viognier between tastings.

The Road Trip

You want food that holds up over hours and doesn't require utensils. Summer sausage is the hero — slice it as you go with a pocket knife. Add a few smoked sausage links for variety, a sharp cheese, crackers, and a jar of mustard. Throw in the cured smoked beef for the driver and some fresh fruit for the back seat.

The Tailgate

This is where Opa's earns its place. Smoked sausage links go directly on the portable grill — Jalapeño Cheddar, Country Blend, Habanero, all of them. Add a bowl of summer sausage cubes with cheese cubes and toothpicks for grazing during the game. Bring buns and stone-ground mustard. Don't forget the cold drinks.

The Picnic

Lighter and prettier than a tailgate. Cured meats sliced thin, summer sausage on the bias, a soft cheese and a sharp cheese, fresh fruit, good crackers, a small jar of fig jam, and a bottle of something cold. Pack a small cutting board and a knife for the slicing. Find a spot under a tree.

The Beach or Lake Day

Summer sausage and cured meats are the move here. Both hold up to heat better than smoked links, and both can be sliced and eaten with hands without needing a plate. Add cheese cubes, crackers, and grapes. Pack the cooler with extra ice — beach days are hard on coolers.

Camping

If you have a way to cook, smoked sausage links over a campfire or camp stove are one of the better camping meals you can make with almost no effort. If you don't, summer sausage and cured meats handle everything cold. Either way, pack mustard and a sharp cheese — the two ingredients that turn a basic camp meal into something you actually look forward to.

Where to Get Everything

Everything in this guide — the smoked sausage, summer sausage, cured meats, mustards, and cheeses — is available at the Opa's Deli & Market in Fredericksburg. The market side carries German mustards, premium crackers, specialty cheeses, and Texas beverages, so you can build the entire cooler in one stop before heading out.

If you're not in Fredericksburg, every Opa's product on the website ships nationwide. The summer sausage and cured meats travel especially well — order them ahead, and they're ready in your refrigerator the next time you need to pack a cooler in a hurry.

The Real Reason to Pack One

A good cooler isn't really about the food. It's about the freedom. The freedom to stop wherever the view is good. The freedom to skip the disappointing restaurant and eat under a tree instead. The freedom to spend more time at the wineries you love and leave quickly from the ones that don't grab you. The freedom to have a real meal in a place you didn't expect to find one.

That's the version of a day trip worth packing for. The food is the easy part. Opa's makes it even easier.

Small Batch. Craft Made. Texas-German tradition — since 1947.

Frequently Asked Questions

What are the best foods to pack in a cooler?

The best cooler foods are ones that travel well, don't require cooking, and taste great cold. Summer sausage, cured smoked meats, sharp cheeses, crackers, mustard, pickled items, and fresh fruit are the foundation. Smoked sausage links can be eaten cold or warmed on a portable grill.

How do you keep food cold in a cooler all day?

Pre-chill the cooler before packing, use both block ice and ice packs, layer drinks on the bottom and food in the middle, wrap cheeses to protect them from ice melt, and keep the cooler closed as much as possible. Pack twice as much ice as you think you need.

What Opa's products travel best for picnics and road trips?

Summer sausage is the most travel-friendly — it's cured, designed to be eaten cold, and holds up for a full day in a cooler. Cured smoked beef and turkey are also excellent for travel. Smoked sausage links can be eaten cold or warmed on a portable grill.

Can I bring a cooler to Hill Country wineries?

Most Hill Country wineries welcome outside food and have picnic areas or patio seating where a packed cooler is exactly what they expect. Some larger tasting rooms have restrictions — check before you go. Picking up provisions from the Opa's deli before heading out is one of the best ways to spend a day on the wine trail.
