Opa's Jalapeño Smoked Sausage is a bold blend of premium beef and pork, infused with real jalapeños for a smoky heat that brings our German roots into full Texas flavor. Crafted in small batches, fully cooked, and ready to grill, sauté, or slice. Bright, balanced, and built around the snap of fresh pepper — this is a pure jalapeño profile, no cheese, just heat and smoke.
Throw it on the grill alongside cold beer and grilled corn, slice it into a breakfast taco with eggs, cilantro, and avocado, or simmer it into a weeknight pasta with cream and roasted bell peppers. Pair it with grainy mustard and crusty bread for a casual lunch, or serve it on a board with sharp cheddar, pickled okra, and crackers for a Hill Country charcuterie spread. All Opa’s smoked meats require refrigeration, without exception. Generally, smoked sausage has a ninety-day refrigerated shelf life and can be frozen for up to one year. Keep tenderloins and jerky in a well-ventilated, dry area of the refrigerator. Do not store tenderloins or jerky in plastic wrap, plastic bags or any sealed container — these items keep best loosely wrapped in a clean kitchen towel or paper towel.
Preparing Opa’s Smoked Meats:
Our smoked meats are fully cooked and ready to serve. Hams, turkeys and tenderloins are great cold or gently heated in the oven… don’t overheat or these delicious, juicy meats may dry out. Grill our sausage, heat in the oven or on the stovetop in a skillet. It’s especially good simmered in beer. We do not recommend heating sausage in a microwave — it toughens the sausage casing.

All products are shipped frozen to ensure the quality of your order. All packages are shipped in a sealed styro-foam container packed with frozen gel packs.
While we make every effort to minimize shipping charges for our customers, any order shipped to an address not in Texas will require expedited shipping and handling rates to accommodate shipping requirements for perishable items. These rates are already reflected in the out of state rate chart.

All SHIPMENTS TO ALASKA AND HAWAII MUST BE SHIPPED USING EXPEDITED SHIPPING.

Great sausage.
Excellent quality and service
Discovered Opa’s sausage from the state fair, but they don’t have the spicy sausage on a Stick anymore so I ordered the jalapeño & Habanero to try. Great quality tasting with a great spicy. Wish they would bring back the spicy sausage on a stick but the jalapeño is a close second.
Quite a bite but oh, so good! Wrap in a brioche hot dog bun with a splash of mustard. Yum!
I love the Opa's Jalapeno sausage. Never cared for any sausage with cheese in it, so imagine my disappointment when my local HEB stop carrying the Jalapeno flavor. I live in San Antonio and because I love it so much, my daughter's drove to the home in Fredricksburg and bought me 4 packs for Christmas. I love my girls, and I love the Opa's Jalapeno sausage!
