Fredericksburg Farmers Market & Local Food Guide

One version of Fredericksburg only exists on Thursday evenings. Around four o’clock, the Adelsverein Halle at Marktplatz fills up with folding tables and familiar faces — a couple dozen vendors from around the Hill Country, live music starting under the pavilion, and the particular pleasure of buying tomatoes from the person who grew them. Visitors stumble onto it and think they’ve found a secret. Locals know better: this is just how the town eats. Here’s the whole local-food map (the market, the farm stands, the year-round stops) from a smokehouse that’s been part of the scene longer than most.

Thursday Evenings at Marktplatz

The Fredericksburg Farmers Market sets up Thursdays from 4 to 7 pm at the Adelsverein Halle in Marktplatz, at 126 W. Main next to the Vereins Kirche. It’s volunteer-run and genuinely local — roughly 25 vendors a week selling Hill Country produce, meats, eggs, cheese, seafood, flowers, herbs, and baked goods, with area wineries pouring tastings and live music going under the pavilion. The prepared-food side makes it a supper plan all by itself: eat picnic-style, listen to the band, shop your way home. The market runs in two sessions each year: a spring-and-summer stretch, then a shorter fall season. And when it’s on, go at four. The best of everything sells first.

Season note, current as of August 2026: the spring-and-summer session ran late March through mid-August. The fall session’s dates post on the market’s website — and check the address while you’re there, because the fall market has set up at a different location in past years. Festival weeks occasionally take a Thursday off, too.

The thing to actually do there: talk. The farmer, the rancher, the baker, the vintner. They’re standing right behind the table, and every one of them will tell you how to cook what you just bought. That’s the whole point of a real farmers market, and this one delivers it weekly.

Peach Corridor: The Original Farm Stands

Fredericksburg’s farm-stand tradition predates the word “farm-to-table” by a few generations. The stands run along Highway 290 toward Stonewall and down Highway 87 south of Main — Vogel Orchard, Burg’s Corner, Jenschke Orchards, Wahl’s Peaches, Das Peach Haus, and Eckhardt Orchards among the classics, and while peaches made them famous, they run deeper than the fruit: jams, salsas, cobblers, ice cream, and seasonal produce. Most run from late spring through the end of summer, with peaches at their peak from about mid-May to mid-August. The Hill Country Fruit Council keeps current hours and availability. The full peach-season playbook lives in its own guide.

Year-Round Stops

When the market’s dark and the stands are quiet, the local-food scene doesn’t close — it consolidates. Wildseed Farms out on 290 East is the landmark: the famous wildflower fields with a market and gardens open year-round. Fredericksburg Trade Days rolls in on the third weekend of most months with its own small-town-fair energy — hundreds of vendor booths across seven barns seven miles east on 290, live music, a biergarten. And a few blocks off Main, there’s a certain deli case our family keeps stocked.

Where the Smokehouse Fits

Here’s the honest version of Opa’s place in all this: we’re not adjacent to the local-food scene. We’re one of its oldest working members. Third generation, same family, food made by people you can actually talk to, which is the entire ethos the Thursday market runs on. The deli’s tasting station is the everyday version of meet-your-maker: try before you buy, ask the counter anything, and walk out knowing exactly whose work is in the bag. On market Thursdays, the timing even cooperates. The case is open until 5:30, so the local supper builds itself: links and summer sausage from the deli, then produce, bread, and flowers from the market tables an hour later. That’s not a marketing pairing. That’s just Thursday done right in this town.

Assembling the Local-Food Weekend

Put it together and the town hands you an itinerary: Thursday evening at Marktplatz for the market. Friday morning down the 290 corridor for the stands. Saturday at Wildseed Farms or Trade Days if the calendar’s kind. The deli anytime the appetite or the cooler needs attention. Fredericksburg’s food scene doesn’t perform localness. It just is local, the way it was before that was a movement. Come hungry, come curious, and come ready to shake the hand that fed you. Around here, it’s usually right across the table.

Small Batch. Craft Made. Texas-German tradition — since 1947.

Frequently Asked Questions

When is the Fredericksburg farmers market?

Thursday evenings, 4 to 7 pm, at the Adelsverein Halle in Marktplatz, 126 W. Main. It runs in two sessions — late March through mid-August, then a shorter fall season, which has been held at a different location in past years. Check the market’s website for current dates and address before you go.

What can you buy there?

Hill Country produce, local meats and eggs, cheese, seafood, flowers, herbs, and baked goods from about 25 vendors, plus winery tastings, live music, and prepared food to eat picnic-style under the pavilion.

Are the peach stands part of the farmers market?

They’re their own tradition — roadside stands along Highway 290 toward Stonewall and Highway 87 south of town, running through the warm months with fruit, jams, cobblers, and produce. Different rhythm, same local table.

What’s open year-round?

Wildseed Farms on 290 East, the monthly Fredericksburg Trade Days, and the Opa’s Deli & Market a few blocks off Main. The case, the counter, and the tasting station, six days a week in every season.

Does Opa’s sell at the farmers market?

No — Opa’s home base is the deli at 410 S Washington St, a few blocks away. It’s open until 5:30 on market Thursdays, which makes the two an easy pairing: the smokehouse case first, the market tables after.
