Summer Sausage: What It Is, How to Eat It, and Why It Travels So Well

Summer sausage is one of those products everybody recognizes by name and almost nobody fully understands. People see it in the deli case. They've eaten it on a board at someone's holiday party. Maybe they got a chub in a gift basket once and weren't quite sure what to do with it. They know it's good. They just couldn't tell you exactly what makes it different from any other sausage on the shelf — or why it might be the most useful product in the entire Opa's lineup for the way most people actually eat.

Here's the short version: summer sausage is the smoked meat product built for everything you can't cook. The cooler. The board. The gift box. The road trip. The office fridge where you keep snacks for the long afternoons. It's fully cured, ready to eat cold, and refrigerator-stable for weeks rather than days — which makes it easier to travel with than almost anything else we make. Once you understand what it actually is and how to use it, it becomes one of the products you keep on hand all the time.

This is the guide.

What It Actually Is

Summer sausage is a cured, semi-dried sausage. That's the difference that matters.

Most of the smoked sausage in the Opa's case is made fresh, smoked, and packaged for the refrigerator — fully cooked but still soft, still juicy, still meant to be cooked further or warmed before eating. Summer sausage goes through a longer process. It's seasoned, smoked, and then dried just enough to firm up the texture and concentrate the flavor. The result is denser, more compact, and built to be sliced cold and eaten straight from the package.

The name comes from the era before refrigeration, when this style of sausage was made specifically because it kept better through the warm months than fresh sausage did. The summer sausage tradition is centuries old in Germany, and it came over with the same settlers who founded the food culture in Fredericksburg. We've been making it ever since — same approach, same craft, same standards as the rest of the lineup.

The flavor is more concentrated than the smoked links because the drying process pulls moisture out and leaves the seasoning and the smoke more present in every bite. The texture is firmer — sliceable like a salami rather than soft like a fresh sausage. And it doesn't need to be cooked. Ever.

The Two Flavors

Opa's makes summer sausage in two flavors.

Opa's Summer Sausage is the original. It carries the same heritage spice profile and balanced smoke flavor that runs through the Country Blend smoked link, applied to the cured format. Clean, well-seasoned, no heat, and the version that pleases everybody. This is the one you buy if you're not sure which to start with.

Jalapeño Cheddar Summer Sausage follows the same flavor logic as the Jalapeño Cheddar link. Real jalapeño for balanced heat. Real cheddar incorporated through the meat for the creamy finish. The same combination that made the Jalapeño Cheddar the best-seller in the smoked lineup, in a format that travels and slices and grazes more easily than anything else we make.

Both come in a chub format — a whole log you slice yourself — or a pre-sliced format for zero-effort grazing.

Chub vs. Pre-Sliced

The chub gives you control. You can slice it as thin or as thick as you want, in rounds or on the bias for a more elegant presentation. A chub also keeps longer in the refrigerator once you've started it because you're only exposing the part you've sliced. If you're building boards, packing coolers, or planning to grab it as a snack over a couple of weeks, the chub is the move.

The pre-sliced is for convenience. The work is already done. Open the package, lay the slices on a plate or pop them on a cracker, and you're eating. If you want zero effort or you're building a quick board for unexpected guests, this is the format that gets you there fastest.

There's no wrong answer. Most regulars keep both on hand for different occasions.

How to Eat It

The beauty of summer sausage is how many ways it works without any preparation at all.

Straight from the package. A few slices on a plate or eaten with your hands. This is how most people start, and there's no reason to make it more complicated than that.

On a charcuterie board. Summer sausage is one of the strongest board ingredients in the entire Opa's lineup. Slice it on the bias for the prettier presentation, or use the pre-sliced format and fan the rounds across one section. It pairs naturally with sharp aged cheese, mustard, and pickled items — and it holds its shape on the board for hours, which most fresh sausages don't.

On crackers with cheese. A slice of summer sausage, a slice of sharp cheddar, a dab of mustard, and a cracker. The cleanest snack in the world. Repeat until the package is empty.

In a cooler. This is where summer sausage really earns its place in the Opa's lineup. It travels better than almost any other meat product and tolerates the realities of a long day in a cooler — heat fluctuations, ice melt, the occasional forgotten lunch — better than fresh sausage does. Slice it as you go with a pocket knife. Pair it with cheese cubes, crackers, and an apple. That's a real meal in a place where most people are eating gas-station food.

As a sandwich. Thin sliced summer sausage on rye with mustard, sharp cheddar, and a slice of red onion. One of the better sandwiches you'll make this week. Takes about ninety seconds.

In a gift box. Summer sausage is one of the most popular items in Opa's gift assortments because it ships well, keeps in the refrigerator after it arrives, and works for every gift recipient — the friend who likes good food, the relative you don't know what to send, the corporate gift list, the holiday gift basket. It always lands well.

Why It Travels So Well

Summer sausage was invented to travel. That's the entire point. The drying and curing process was specifically developed to make a meat product that lasted longer through warm weather than fresh sausage could — which made it the original portable protein for hunters, farmers, soldiers, and travelers in centuries when keeping fresh meat cold was a constant challenge.

That heritage is still what makes it useful today. Summer sausage holds up to a long day in a cooler. It tolerates a short period in a backpack on a hike. It's the smoked meat product you can treat a little more casually than the fresh sausages — slice it as you go, eat it cold, refrigerate the rest, and it'll be there waiting for you tomorrow.

For travel, picnics, road trips, tailgates, hiking, camping, and the kind of trips where the food has to keep up with the day, there's nothing else in the Opa's lineup that performs the same way.

How Long It Keeps

Sealed in the original packaging in the refrigerator, summer sausage keeps for several months — check the sell-by date on the back of the package. Once opened, store it wrapped airtight in the refrigerator and consume within a week for best quality. The chub format holds longer than pre-sliced because less surface area is exposed.

For shipping, both the chub and pre-sliced formats travel well in the standard Opa's cold-shipping packaging. Order it and it arrives in the same condition it left the deli.

Why It's Underrated

Most people think of summer sausage as a holiday gift basket item — something you receive in December, eat through January, and don't think about again until next year. That's selling it short. The same product that anchors a Christmas board is the one that should anchor a road trip cooler in July, a backyard board in May, an afternoon snack in October, and the office drawer in February. It's a year-round product that most people only think about for one month a year. That's the thing worth changing.

Once you have summer sausage in the refrigerator regularly, you find reasons to use it constantly. That's the sign of a product that's earned its place. Try it once and see.

Frequently Asked Questions

What is summer sausage?

Summer sausage is a cured, semi-dried sausage designed to be sliced cold and eaten straight from the package — no cooking required. The drying process firms the texture and concentrates the flavor, and the curing makes it more travel-friendly than fresh sausage. It still requires refrigeration.

How is summer sausage different from smoked sausage?

Smoked sausage links are fresh-packed, fully cooked but still soft, and built to be cooked or warmed before eating. Summer sausage is cured and dried, firmer in texture, more concentrated in flavor, and designed to be sliced cold and eaten as-is. Both are smoked using the same heritage approach, but the formats are built for different uses.

Does Opa's summer sausage need to be cooked?

No. Opa's summer sausage is fully cured and ready to eat straight from the package. Slice it cold for boards, snacking, or sandwiches.

How long does Opa's summer sausage last?

Sealed in the original packaging in the refrigerator, Opa's summer sausage keeps for several months — check the sell-by date on the back of the package.
